The 66 Gilead Distillery produces Wild Oak Whisky, a bourbon-style spirit, on its 80-acre farm in Prince Edward County, Ontario. The mash bill consists of 51% corn, 30% rye, and a blend of wheat and peated barley. It is aged in new, charred oak barrels and is not chill-filtered. Availability is currently limited to Canada.
