Wigle Organic Pennsylvania Bourbon

It was gratifying to discover a distillery situated within Pittsburgh. I possess Batch 1 from both the small cask and barrel strength lines. The incorporation of locally sourced grains imparts a distinctive flavor to this bourbon, which is not harsh considering its 90+ and 100+ Proof expressions. I prefer it with ice rather than a splash or neat. Nevertheless, any method is satisfactory. Initially, I considered it somewhat expensive. However, upon observing other bourbons with higher price points and, in my judgment, lesser quality, I have revised my opinion. I share this with companions from Western Pennsylvania, just as I do with the Monongahela Rye.

Nose: Corn, grain, barley. Palate: Vanilla. Finish: Short, light spice. This local craft distillery, located in Pittsburgh's Strip District, is now bottling its 4-year-old PA Straight Bourbon. With an organic mash bill of 68% Corn/18% Wheat/17% Malted Barley, the grains are prominent on the nose, and the palate is typical with vanilla. Overall, it's a straightforward pour that functions as intended but could benefit from more complexity and refinement.

Don’t let the “organic” label deter you. This is unexpectedly complex and packed with flavor. The aroma is sweet and smoky. The initial taste was vanilla, followed by oak, then brown sugar. Adding a small ice cube really amplified the smoky flavor. It’s now one of my new bar recommendations. Excellent for sipping straight or in a manhattan.

The aroma is sweet with hints of acetone and ethanol. Clearly a young whiskey, but not harsh. After resting, notes of fresh corn, light vanilla, and new oak emerge. The low proof is apparent from the first sip. Tasty, but basic. Light, somewhat one-dimensional.

Corn from Wapsie Valley is prominent initially. It has a musty and dense character. This is complemented by sweet hay, reminiscent of machine-cut, dusty corn kernels on a warm summer evening. I sampled it. Poured more. And sampled it again. Found it acceptable. Nothing objectionable.

If you appreciate the aroma of a campfire (and how it sticks to your clothes) then you will adore this whisky. It is ideal for those desiring a somewhat lighter and smokier option for warmer weather, without any peat.
