Whiskey Acres Bourbon

Nose: Bright. Corn meal, butter, and vanilla pudding. Palate: It reminded me of creamed corn on rye bread. Very thick consistency. This is a young spirit with that canned cream corn, mashy taste upfront. It needs more time in the barrel to develop spicy, woody notes and mellow out the corn. Finish: Earthy. It tasted like topsoil, which I didn't care for. Overall: A marginal spirit, at best. It's new and mashy, thick and syrupy. It's not terrible, but it's not my favorite.

Fantastic! This newer distillery I've been watching is consistently improving their product with age. They cultivate their own grains and distill on their family farm outside of Chicago. It's quite complex for its youth, with notes of caramel, distinct corn, spice, and a hint of dried orange peel. The aroma and finish are pleasing. Impressive.

Nose: Very young, green, woody, grassy, and earthy. A slight sweetness, not quite vanilla, perhaps like a marshmallow. Palate: Light and very thin. A mild barrel char flavor, with an herbal quality and a typical peppery rye lingering at the end. Similar to, but better than, Journeyman Featherbone.

My father and I found this more enjoyable after adding an ice cube. It was quite sharp on our palates when first tried neat. This requires additional barrel aging (only 2 years). I will need to revisit this in the future; it's not bad.

Nose: Bright. Citrus orange and brown sugar. Palate: Cocoa and toffee. Grassy sweetness. Finish: Mild spice. Minimal chew. Soft tobacco and marshmallow. Overall: It's young, but quite decent.

A very unique pour, but excellent! Fruity notes of apples, pears, and apricots, very smooth with abundant flavor and a spirited finish. Corn is present! Very pleased with my first taste from Kentucky.
