Starlight Carl T. Huber's Signature Bourbon

Some bourbon enthusiasts I know aren't fond of this spirit. I, however, am. It's one of the rare craft whiskeys I've sampled outside of Kentucky that doesn't taste like young cough syrup and oak. Nose: reminiscent of a wheated bourbon (it's part of one of the mashbills) — cherries, oak, leather. Taste: somewhat brittle, quite sweet, with hints of nutmeg and other baking spices. Finish: medium. At four years old, it's a rather good, uncomplicated sipper. It's certainly not bad. I'd be interested in trying some of their barrel selections and finished whiskeys.

This is a quality spirit, especially considering its youth and origin from a new distillery. It has sufficient flavor to be thoroughly enjoyed neat, and I'm confident it would excel in cocktails. It possesses a smoothness that complements classic bourbon characteristics, along with enough spice to keep you engaged. The finish is also quite lengthy. Considering the price, it's an obvious choice. I'm keen to sample some of their recently released single barrels; this one is a blend of two distinct mash bills.

Aromas of caramel and hazelnut, with anise appearing toward the end. The taste brings chocolate, a fleeting touch of dark fruits, then shifts to prominent citrus. The finish is brief and vibrant, with citrus notes lingering. This is a very distinctive character, particularly for a four-year-old bottling. To put it plainly, it's the most intricate bourbon I've ever had that isn't barrel proof. I strongly suggest it, especially considering its affordable cost.

The aroma presents lovely dark cherry notes alongside touches of mocha. I didn't anticipate much because the Carl T is a young spirit at only 4 years and quite affordable, but it truly amazes me. The palate is full of rich bourbon character with a minimal burn. The lingering aftertaste features chocolate-covered cherry. Typically, I score on a 100-point system. This one earns a 94!

Smell: Light and easy going, corn mixed with honey. Very pleasant and sweet. Secondary notes of sawmill Notes: Tongue tip and enjoyable spicy back, a bit of an ethanol note catches (taking away from an overall enjoyable bourbon.) End: Opens heavier but transitions well, fairly long finish for the proof

This one was a pleasant surprise! My first Starlight and a solid purchase for the price. I believe it cost me about $35. Smell: quite sweet, subtle oak Taste: upfront grain, hint of pine End: lingers for a bit
