The bottle is taller than average and visually appealing, with a substantial feel and a design reminiscent of U.S. currency. The liquid itself is clear with a faint green tint. It smells strongly of green bell pepper, and you can't detect the alcohol. It gives off various green chile aromas. Despite its jalapeño flavor, it's not particularly spicy, focusing more on taste than heat. The initial taste is distinctly jalapeño, becoming slightly sweet and mildly spicy. The finish leans towards bell pepper, matching the aroma. While made with serrano and habanero too, the palate can't distinguish them, though they likely contribute to the overall profile. This is a highly enjoyable spirit, excellent for sipping. It works well in cocktails, on ice, and straight. Looking forward to trying the unflavored version to understand the base distillation, but for an unconventional clear spirit to add flair to drinks, this is it.

About this bottle
The creation of St. George Green Chile Vodka involves a multi-stage process. Initially, a still is loaded with jalapeño, lime peel, and a non-GMO base spirit, which then passes through a cilantro-packed chamber. Subsequently, the resulting spirit is divided and individually macerated with additional peppers, including Serrano, habanero, and red and yellow sweet bell varieties, before being carefully recombined. This blend is then lightly filtered, retaining a subtle green hue.

As a proud New Mexican, I was predisposed to disappointment. It wasn't as bad as I feared, but I'm uncertain if the combination or expression fully achieved what my patriotic heart hoped for. Commendable effort, adequate execution. It's inoffensive, but not quite what was anticipated.
Wonderful aroma of cilantro. Excellent green chile flavor with a mild heat that feels natural from the chiles. Superb.
Tastes exactly as anticipated. Contains chili flavor but lacks genuine spice. Excellent for adding a little taste to mixed drinks.
Considering the price, there's a lot of intriguing complexity happening here. 👌
A delightful drink on its own, whether chilled or in a spicy martini.
