The flavors diminish into a bracing, dry woodiness. This is unmistakably where the oak resides. A dry wood note persists briefly in the finish before fading into a dry mouthfeel that makes you want another sip. I picked up this bottle on sale for $25 and felt it was worth considerably more.

At Spirit Works Distillery in Sonoma County, founders Timo and Ashby Marshall oversee an all-female team crafting grain-to-glass spirits, including vodka, gin, sloe gin, and whiskey. Spirit Works Straight Rye Whiskey features a mash bill predominantly of rye, with all grains milled, mashed, fermented, and distilled on-site. It matures for a minimum of 2 years in new, charred 53-gallon American oak barrels and is bottled at 45% ABV without chill-filtration, originating from barrel 13-0020.

The aroma is reminiscent of potpourri and green apples, evoking a high-end candle that I wouldn't purchase but appreciate as a subtle scent. The palate echoes this, with notes of baked apples, nutmeg, cedar, honey, and toasted coconut. It possesses considerable intensity.
Thick and herbaceous aromas. The palate is dominated by wheat with a whisper of flowers. A touch of heat is felt, settling warmly. The finish is subtle and a bit acrid.
