Madisyn Cabral 3.0

It spent 4 1/2 months aging. Barrel #2 was used, and Bottle 58 was filled by DT. Its color is like Chardonnay. The aroma is slightly fruity with some higher alcohol notes. The taste is a bit harsh, with corn flavor present. There's a hint of smoke, but also an ashy flavor. The finish has mild vanilla and an earthy character. I've also tried the 12-month aged version, and it's a completely different drink. It's much more subtle, complex, and mellow. However, for only 4.5 months of aging, this whiskey is better than many distilleries that age for 2-3 years and ask for more money.

Twelve months in wood. Cask 53. Bottle number 34. Filled by FF. Appears honey-colored. The smell is still corn-forward, but the taste is softer with some berry sweetness and a hint of smoke. The ash character from the younger version is gone, thankfully. The finish almost hints at sherry. This spirit presents the most smoke I have encountered in an American whiskey recently, and I rather like it.

You can detect some of the tails, suggesting it's still close to new make. It's a bit bland with a corn dust flavor.
