Rabbit Hole Kentucky Straight Bourbon

I had been eager to sample this but had been disappointed by too many young, craft whiskeys. Tonight, it was offered at a reasonable price for a serving at a restaurant, so I tried it. Light honey in color with a sweet, potent nose, though it is simple. I detect notes of cotton candy or bubble gum, not much else. For a young bourbon, the alcohol presence is subtle. The palate is again sweet, but more reminiscent of apples and honey. There is no discernible finish. I'm glad I didn't purchase a bottle, but I would certainly drink it if offered.

Finally opened this one, as I had left it at my Dad's place. We shared a few pours! This is very straightforward but has few shortcomings. The honeyed malt is noticeable in the taste, and the finish is brief but includes a hint of cinnamon. An easy-drinking spirit that you can enjoy while engaged in other activities, like visiting with family or mowing the lawn. The mouthfeel is richer than anticipated for a younger whiskey.

Nose: mild oak, a hint of cinnamon, honey, and faint raisins. Palate: a touch of spice with a sweet conclusion. Finish: most flavors dissipate rapidly, though the spice lingers a bit longer. In summary, an acceptable mild sipper, which I might rate slightly higher if it were priced lower.

Compared to David Nicholson Reserve and New Riff, bottle and bonded, this was the top choice, very close to the Nicholson. This one was slightly sweeter and had a more complex flavor profile.

Full nose of sugary bananas and spices, with faint traces of mint and tobacco. Oak spice is more pronounced on the palate, leading to an extended finish. Its youthfulness is apparent at the very end, but it's a pleasant, sweet drink.

The initial taste is spicy, awakening the palate. Subsequent sips reveal a rich, full-bodied sweetness. The finish is brief and not very spicy. Best enjoyed with an ice cube.
