A complicated Greek cordial made with Mediterranean plant life like aniseed, fennel, coriander, and the uncommon mastic from Chios. These plants are put through a small, old-fashioned copper still process and then aged in wood for at least 20 months before bottling at 40% ABV. It starts subtly with traces of wood, resin, plants & seasonings; its robust middle introduces tastes of licorice & mastic resin; finishing with a medium, somewhat bitter end featuring a touch of oak.

An aroma of flowers and anise, it appears clear in the glass with coating legs. It feels viscous in the mouth but isn't excessively sweet. Strong anise and herbal notes are prominent, with a touch of pepper and warmth at the end. The finish continues this profile, ending with a slight tart grape aftertaste. When ice or water is added, it becomes cloudy and milky white, and the flavor sweetens (still distinctly anise) with a less sharp character. I've been consuming this periodically since the 1970s. A love for anise is essential to enjoy this.
