Old Standard Bourbon Whiskey

This organic bourbon (I wasn't aware that was a thing!) shows very thin, oily legs in the glass and has an attractive amber color. The aroma is pleasing but not remarkable, with hints of dry straw, unripe strawberry, honey, lemon, vanilla, and a floral quality. The palate offers notes reminiscent of a dessert, with burnt caramel, oatmeal, and chocolate, along with fennel and some barrel spice. The finish is long and initially hot, with a tangy spice similar to chicken from a Chinese restaurant. Cheers!
