An aromatic, carbon-negative Gin from Scotland's Highland region, created by Master Distiller Kirsty Black using peas. It begins with an aromatic bouquet of berries, citrus, herbs, and spices, leading to a crisp character with notes of juniper, lemongrass, citrus leaf, peas, pine, and quinine, culminating in a zesty, medium-length finish. Sampled in November 2023.
