Aged four years in sherry barrels, then four months in casks charred with peat. No added color or chill filtering. The aroma has light smoke, leather, and robust sherry. The initial taste is mild smoke and leather, quickly shifting to fruity notes with some berries, concluding with strong sherry. The ending is prolonged and sweet, predominantly sherry. This spirit improves significantly with time, both in the glass and the bottle. Just finished my third bottle. The first two bottles from July 2020 were superb. The third bottle from April 2020 seemed quite different and dull initially, but really came alive after a couple of months on the shelf. A wonderful spirit overall, but with very conflicting thoughts on different batches.
