About this bottle

Based in Tel Aviv, Israel, Milk & Honey Distillery offers its Whisky in Bloom Young Single Malt Lightly Peated. This single malt was matured in three barrel types: ex-bourbon, ex-red wine (STR barrels), and ex-Islay casks (peated single malt). The late Dr. Jim Swan, who advised Milk & Honey, developed the STR casks, which signify a process of shaved, toasted, and re-charred wood. It is bottled at 46% ABV without chill-filtration and became available in the US in December 2019. It holds Kosher certification.

A lot of mustiness, which was a real surprise given how young this is. A little water reveals a candy sweetness on the nose. The sweetness and earthiness persist on the palate, with a touch of tartness and tingling on the finish. Eager to sample more from this distillery.

Nose: turpentine, acetone, funky, musty with acidic citrus (lemon or grapefruit) Taste: woody, musty with mild burn Finish: short to medium, dry Tasted this blind. Wow, what a whisky for two years old. Really interesting. Worth trying for something different.
