While on holiday in CO, I sought out bourbons from this state. I purchased this on impulse, without any prior knowledge or reviews. Essentially, I chose it because the bottle looked appealing and it was from CO. Produced in Winter Park using five locally sourced grains and water from the Rocky Mountains, bottled at 80 proof. There's no age statement. It's noted that it's exposed to two additional types of charred wood besides the charred oak barrel. Color: Resembles apple juice Nose: Vanilla and oak, a hint of chocolate. Some ethanol present. Initial taste, immediately after pouring: Vanilla and baking spices are prominent. This is a low-proof bourbon, so it's quite smooth. Second taste, after resting: Notes of peanuts and caramel emerge. Oak is present. Sweet, but not excessively so. A touch of spice on the finish. Very well-balanced. With water added: Less spice, more sweetness. A hint of pear. Some tobacco notes. I believe it's best with a little water, as it reveals new and interesting characteristics. Finish: Medium in length. I detect hints of oak, a subtle smokiness, and a touch of caramel. While it lacks significant complexity, it's a reliable and satisfying bourbon. I truly enjoy it. It's easy to drink straight, particularly if you don't favor spicy bourbons. I actually prefer this to some of the more expensive bourbons in my collection.
