High West Cask Collection Bourbon Cabernet Sauvignon Finish

Aroma: Smells wonderful, with a fruitiness like fig or plum and crème brûlée. It sounds odd, but it makes sense in my head. Taste: It's actually pleasant on the palate, but I'm struggling to identify specific notes. Perhaps faint hints of brown sugar candy. However, I'm not really detecting the expected cabernet notes. Texture: Smooth and thin, it doesn't really coat the mouth. Finish: Not the shortest finish, but definitely on the shorter side. Overall: Enjoyable and pleasant to have a glass of, but my favorite part was the aroma. I'll see how it evolves after being open for a while. It's nice to have a bottle on the shelf, and I'm glad I tried it, but in this price range, I would prefer something like a Knob Creek 9-year single barrel.

Smells of heavy oak, Cabernet, rye, pear, charcoal, vanilla. Taste is sweet vanilla and fruit, oak tannins, dry cab, spicy rye; bold overall. Long spicy, oaky tannic finish. With a little water the tannins really open up and it smells more like the inside of a cabernet barrel than a bourbon and there’s a new chocolate covered cherry element. The flavors are all there but they blend better. Good either way, but I think the water really makes it shine. Found in Santa Fe New Mexico with a friend.

Tried neat, courtesy of a small sample from a friend. Nose: Lots of grain, like wheat, and spice. After letting it sit and adding a small ice cube, there were slight hints of vanilla & caramel, oak, and char, plus a brief, very interesting pickle jar brine note. Water might have been a better addition than ice. I will have to try this again someday.

Aroma: brown sugar, citrus peel, and in the background...maple. Slightly spirited but still enjoyable. Taste: lemon juice, boysenberry syrup, melon, caramel, black pepper. A bit too warm. Finish: citrus peel, melon, strawberry menthols This drinks quite similarly to a cask strength sherried scotch, and that's a compliment. Solid product.

Appearance - Brown with orange hues when held up. Very viscous. Nose - Grapes, wine-like, vanilla Palate - Starts with grape and vanilla sweetness, quickly turning to spice with a slight burn. Finish - Dry, moderate in length

Many spirits seem great initially, then disappointing, then settle in after more sips or on ice. This is one of those. It has an amazing aroma. Generally solid.
