From High Bank Distillery: The aroma reveals notes of chocolate malt and recently felled oak. The taste includes sweet wheat, caramel, honey, and sugared nuts, concluding with leather and dried apricots. My assessment of batch 01: I detect the oak but not the chocolate malt. I smell the wheat and the oak. It's pleasant and not overwhelming. On the palate, wheat and honey. Slightly nutty. I can't detect the leather, which I believe is an inaccurate description. The texture is very smooth. The finish is brief, with a light apricot flavor and carries the wheat from start to finish. Overall, it's an adequate initial bourbon offering from High Bank Distillery. I anticipate their future batches will improve with time.
