Nose- mineral-like, earthy, damp tobacco, hints of banana/grape. Palate- prominent young wood initially, spicy rye character in the middle, mild caramel, some grassy mint, reminiscent of banana Runts candy. The finish is dry and extended with notes of barrel char and honey apricot. Overall- a complex profile. Not a full-bodied, traditional bourbon. High rye content, significant char, moderate sweetness. Lower spice levels. It would pair well with a mild cigar.

Aroma: hay/straw, light oak, green apple. Taste: vanilla, sweet oak, honey, bubblegum. Finish: light-medium body.
The best I've tried from Hatch Distillery up to this point.
