Initial taste: Sweet. Tastes like cherries and a subtle hint of Vanilla Coke. Also like buttered popcorn. It has some warmth, but it's mostly smooth. After resting: It becomes sweeter the longer it sits. It develops an almost butterscotch-like quality, with notes of cinnamon red hots. With added water: It becomes exceptionally smooth. Caramel notes become prominent. A mild smoky characteristic balances the sweetness. There are some fruity notes on the finish that are reminiscent of WhistlePig. Lingering taste: Medium to long duration, with fruity undertones. I thoroughly enjoyed it. I hadn't sampled Elijah Craig since I began exploring bourbon, so it was a pleasant experience to revisit it. This is an excellent drink for sipping, and I'm pleased I purchased it.

This spirit is 11 years old, acquired in Las Vegas. It possesses a pleasant warmth that progresses with a flavor reminiscent of crumb cake. I believe 94 proof is agreeable with this. Just enough potency while preserving the flavor.
