Eagle Park Bourbon Whiskey Batch 002

The color is pale golden straw. It clings to the glass, leaving beads at the top of the swirl. The nose has light caramel, dry cereal grains, and some herbal notes like eucalyptus and cinnamon. It's bright and sweet initially, with honeysuckle and clementine. The mid-palate introduces some of the nose's notes, like mint and spice. It's warming, but very light. The finish shows a lot of wood but very little char, leaning into an emerging vanilla frosting character before returning to that herbal note. While it lacks complexity and smooth transitions, it's quite tasty! It shares characteristics with Irish whiskeys and highland scotches as much as a bourbon.

The flavor is great, though it's a bit light, which is understandable given the alcohol by volume.
