This rye from 2020, batch 2, is made with 10% malted rye and 90% unmalted rye, bottled at 57.2% ABV. This particular bottle, number 188 of 1000, spent 59 months aging in New Ontario Oak (cask 113). That's just under five years old, for those who prefer not to do the math. Its aroma has notes of orange blossom honey, grain, and damp straw. It makes me feel like I'm walking around a farm with the sound of happy chickens nearby. A hint of apple and a rustic funk emerge after it rests. After opening, the sips offer subtle honeyed apple, strong pepper, and a dryness that borders on tartness. The moderately lengthy finish is a relief, with pear and light honeycomb sweetness. This golden-colored rye evokes summertime in the country. Interestingly, the aroma and finish are my preferred aspects. The palate of this rye gets better as it sits and opens up in the glass. I've revisited this bottle months later, and it remains consistent with its initial characteristics. This 2020 rye release offers a unique alternative to the many ryes that are heavily oaked and emphasize baking spices.
