Daniel Weller represents an experimental bourbon line from Buffalo Trace Distillery, focusing on the influence of different wheat varieties in the mash bill. This particular bourbon utilizes Emmer wheat, an ancient Egyptian grain commonly used in baking and brewing. The spirit is also distilled using the E.H. Taylor, Jr. micro-still, a hybrid pot and column still engineered by Master Distiller Harlen Wheatley. Daniel Weller, who settled in Kentucky in 1794 after serving in the Revolutionary War, continued his father's whiskey-making tradition. He is the grandfather of William Larue Weller, an early proponent of wheated bourbon in Kentucky. A limited edition expression is anticipated every two years. It became available in select retailers, bars, and restaurants starting in June 2023, with a suggested retail price of $499.99.

Very intriguing flavors. The nose was distinctly autumnal, smelling exactly like pumpkin. It's not as sweet as Antique 107 in comparison, but it's certainly unique for a wheat variety.
