A New Zealand distillery recently started operations. The Spirits Workshop, located in Canterbury on the South Island, is aging whisky and has been crafting other spirits since 2016. While not typically a gin enthusiast, I found this offering quite commendable. It features a pleasant combination of local ingredients: Manuka honey, citrus from Gisborne, and lavender from Otago. The flavor intensity doesn't match Juno Gin, but it shares similar taste elements with a slightly broader spectrum that I could detect but not pinpoint. Other botanicals present include Angelica Root, Ginger Root, Coriander Seeds, Lime zest, Cinnamon, Cardamon, and Star Anise.
