Cleveland Underground Bourbon Whiskey Finished with Black Cherry Wood Full Proof

A gift from a friend, who is quickly becoming my favorite person. I suspect this gesture is an attempt to sway my opinion of their hometown, which isn't the worst place in Ohio, but certainly isn't the best. Their standard bourbon was among the worst spirits I've ever sampled, likely due to a fraudulent aging technique. Time is irreplaceable, and while I anticipate this barrel-proof expression will be decent, the addition of black cherry wood may disrupt the natural maturation process that would have occurred with adequate aging. The color is deep and rich, though less intense than expected for a two-year-old barrel-proof spirit. This coloration likely results from the added wood, as the lack of a "straight" designation confirms its youth. The aroma presents clean, fruity ethanol with a prominent black cherry wood presence, distinct from oak. Hints of lemon appear, and the ethanol dissipates before becoming overwhelming. It smells like an excellent cherry wood-aged spirit, but classifying it as a low-aged bourbon shifts expectations, potentially diminishing its appeal. The initial taste is intensely cherry, reminiscent of fresh juice, quickly transitioning to young grain, particularly corn. The absence of the mash bill leaves me guessing a high-corn base. The presence of hot cinnamon gum suggests rye, though its subtle nature indicates a low percentage. The finish is fiery, close to raw ethanol, but consistent with 115 proof. A subtle baking spice adds some depth to the otherwise raw, grain-forward finish. Each sip brings back the fresh cherry notes. My primary observation is its youth. Without the cherry wood, it would taste even younger than new make. However, the cherry wood imparts unique, strong flavors, having spent considerable time in contact with the spirit. Had it been marketed as a young American spirit aged in black cherry wood, it would be quite good, albeit specialized. Unfortunately, this distillery rushed into the bourbon trend, failing to age it properly. Their attempt to accelerate aging with pressure, rather than time, is particularly egregious. This approach has tarnished the bourbon industry and profited from misleading consumers. While I'm not angry, I am impressed by their ability to deceive customers more effectively than they've deceived themselves. Fortunately, more bottles can be purchased, and this one is now marked.
