As the description is unclear, I'll specify this is 93% locally grown rye + 7% German chocolate malted rye. It ages for 3 years in "first fill" American oak, followed by 5 weeks in 30-year-old Oloroso sherry barrels from Spain. Now, let's get to it...Wow. I just opened this bottle for the first time last night, and it met my expectations! Compared to other Canadian spirits like Lot 40 (regular and CS), Collingwood Double-Barrel, C.R. Northern Harvest Rye, and others... this bottle ranked just below Lot 40 Cask Strength. Yet, it's so distinct! It begins as a young, lively rye with an herbal quality. Dry, grassy notes transition to a well-balanced amount of sherry as it develops. And the finish is incredibly long-lasting! The new oak char is evident on the nose and palate. Where else can you find such a profile in a Canadian rye!!! And with time in the glass, fresh dill emerges, which is wonderful! It's worth the price, and I only wish I lived closer to Montreal to keep up with this distillery's future releases! I highly recommend it.
