Boone County Kentucky Pot Still Bourbon

This was our second sampling during our afternoon bourbon exploration. It's a five-year-old, high-rye bourbon, pot-stilled, and then aged and bottled by Boone County. It presents a dark hue but appears quite thin, almost watery in the glass. I've been eagerly anticipating this one, as I'm a fan of Boone County. First smell: Did I just walk into the distillery itself? Not the aging warehouse, but the actual production area. The aroma is heavily characterized by raw grain and mash. It's not necessarily unpleasant, just unexpected. After letting it rest for a bit, some barrel influence starts to emerge, but not significantly. During a distillery visit a couple of years ago, I recall their rick house being quite unusual. It was more like a warehouse with broad aisles designed for forklift maneuverability, featuring many open doors and ventilation. This made me ponder its effect on the bourbon, considering the reduced temperature fluctuations. This is a five-year-old spirit, yet it drinks much younger. At 90 proof, the alcohol is as expected for its age, being mild, but the barrel flavors leave much to be desired in my opinion. Someone in our group commented that it's a bit rough but would be excellent on a cold evening by a campfire. Perhaps, but I prefer a more sophisticated profile. The bottle has been placed back in the cabinet and will be revisited in a couple of months.

Having lived just a short distance from where Boone County is produced, I've observed their development and sampled most of their offerings. The 1833 and Small Batch were both enjoyable, with the 1833 being my preferred. I understand some individuals may object to MGP products (like the 1833), but if I find a bourbon appealing, then I find it appealing. This Pot Still expression leaves me undecided. Immediately after pouring, the aroma is heavily influenced by alcohol. After allowing it to rest, notes of salted caramel and vanilla become apparent. The taste is another perplexing aspect; while caramel, toffee, and vanilla flavors are present, there's a strong alcoholic impact. For a 5-year-old bourbon, I would not expect it to be so... it drinks somewhat immaturely. I do appreciate this spirit, but I'm uncertain if I would purchase it again.

From this, I detect a significant amount of grain. It's present in the aroma, taste, and finish. Cornmeal, perhaps buttered toast, and oatmeal. These are characteristics often found in younger spirits. As it sits, however, it begins to open up more. Its profile is somewhat reminiscent of Watershed, possibly due to its youth. At $55, I'd likely keep my money, but it's not bad, and the bottle has a substantial feel, making it potentially useful for home defense in a pinch.

On the nose: It has notes of vanilla and chocolate, almost resembling s'mores. On the palate: It's very delicate, but I detect cherries and banana topped with vanilla whipped cream. The finish: Very brief, but full of flavor! Overall: It's a subtle bourbon, but exceptionally light, refreshing, and easy to enjoy!

Nice color and aromas. Vanilla and caramel come through. Maybe a bit of grass? Tastes very hot with a lot of alcohol burn. A bit surprising. A hit of licorice comes at the end with some sweetness.

The higher corn content gives this a good sweet taste that is very smooth. This is an excellent Bourbon.
