113.6 Proof (2018 release) Aroma- Tropical fruits, wild flowers, caramel, honey, lemon, wet wood, baking spices, apples, lavender Palate- Sweet honey, cinnamon dusted apples, orange candies, oak, lavender, caramel Finish- Thick, chewy mouthfeel with a long finish of honeysuckle, baking spices and a sort of floral, lavender flavor An absolute delight. Belle Meade absolutely nailed the balance between not enough and too much honey when aging this bourbon. The aroma is fantastic, with the highlights being (of course) honey, tropical fruits, and a wild flower scent that reminds me of the very orchard the bees are from. The palate blew me away. Perfect balance of honey, spice, and floral flavors. The mouthfeel on this really feels like a bourbon aged in a honey barrel. Thick, chewy, and delicious. The bourbon coats your mouth and sticks to it (just like... you guessed it, honey) and leaves a long finish that is to die for. Truly one of the best bourbons I've ever tried. Bravo.

About this bottle
Honey Cask Finish represents the second release in Nelson's Green Brier's Craftsman Cask Collection. Their standard Belle Meade Bourbon was matured for several months in two casks that previously held natural honey sourced from Tennessee artisan producers TruBee Honey. This limited, distillery-exclusive bottling consisted of 300 bottles, with proofs of 113.6 or 105.9 depending on the specific cask.

Honey and sweetness on the aroma. More on the palate. The first sip is good, thick, coats the mouth. Very rich. It has some sweet heat. The sweetness becomes more dominant the more you drink, limiting how much you can have. Definitely a dessert beverage.
Sampled batch 3 from the 2020 release, bottle 57. Thick texture. A touch of honey at first, followed by some heat and a light honey finish. Quite distinctive, with very long legs on the glass. Purchased a 1 oz sample for $25.
From the 2020 batch 3, bottled at 100 proof. It's thick, sweet, and has a pleasant bite at the conclusion. The honey note lingers throughout a lengthy finish. I would prefer a version with a bit less intense honey upfront.
Typical MGP profile. A faint honey flavor that complements the overall profile well. The high proof conceals much of the honey.
