Cornbread with butter and syrup on the nose, a slight funk like cheesecake. Hot to start, peppery from the high proof. The second sip mellows significantly after the initial shock and yields a delicate warm sweetness with high wheat notes and malty, full undertones. Not a deep flavor like leather or oak, but more of a pleasant sherry and warm bread taste. Smooth, oily, and an easy finish. Certainly a premium whiskey. Reddish tint and a fancy flavor.

It's hot when you first taste it but manageable (2021 Limited Edition, 109.8 proof, batch 8, bottle 239). Syrupy sweetness and some cinnamon, bringing to mind cinnamon raisin toast. A good bourbon overall, but particularly good when considering the young age of this distillery.
I tried this out of curiosity for the all-malt expression and due to its gold medal accolades. The all-malt profile isn't for my palate, though I'm sure others will enjoy it.
SMOKE and vanilla on the aroma, along with a BURN. Thin, having aged only 7 months per bottle, and a burn in the aftertaste. I did not find it enjoyable.
