Watershed Distillery 6 Year Apple Brandy Barrel Finished Bourbon (Batch 005)

Nose: Freshly stewed apples, with hints of caramel and cinnamon. Palate: Cinnamon followed quickly by vanilla. A touch of tannic bitterness as it transitions to the... Finish: Long and lingering with notes of vanilla and baking spices. This is the 5th batch of Watershed's Fall Finishing Series. This six-year-old bourbon was aged for 10-12 months in apple brandy barrels and then bottled at barrel strength. The specifications are impressive, with the proof at 129.2 and a #5 barrel char (I didn't realize it went that high!). I've had Watershed barrel strength before, and the influence of the apple brandy barrel finish is clearly evident. The result is a robust bourbon with classic apple pie flavors. Ideal for autumn.
