St. Augustine produces Florida's inaugural bourbon, with distillation commencing in December 2013. Single Barrel Select has been aged for a minimum of two years, qualifying it as a straight bourbon. Its mashbill consists of 60% corn, 22% malted barley, and 18% wheat, with an emphasis on locally sourced grains. Despite being a single barrel expression, it is not bottled at cask strength, maintaining an ABV of 47%.

A complex and rich spirit from St. Augustine Distillery in Florida, made with 60% Florida corn, 22% barley, and 18% Florida wheat. It was aged at least 3 years in American white oak barrels. The aroma presents grains, wood, fruits, nuts, herbs, and spices. The taste is full and rich, with notes of cherry-vanilla ice cream, marshmallow, toffee, and sage. The finish is somewhat creamy and woody, lasting a medium duration, with hints of oak, dark chocolate, cinnamon, Brazil nut, banana leaf, and tobacco.
