Aroma: Faint malt. Peach, pear, apricot. Mild vanilla. Caramel, toffee. Taste: Pear, dark honey, light floral notes, basil, thyme. Prominent peach. Malt reminiscent of pancakes. Adding water reveals rich caramel and coconut vanilla. It also brings out kiwi and intensifies the peach. A second addition of water introduces nectarine and other delicate fruit notes. It also enhances the herbal characteristics of basil, thyme, sage, and cardamom, along with hints of orange and maple syrup. A third addition of water brings out some apple notes. Honestly, this tastes a bit rushed in the distillation process, but a 23-year-old Canadian Speyside at this price point is rare. It possesses layers but truly requires careful attention to reveal them.
