Who knew Mexico made whiskey?! I had no idea; I always thought they only produced tequila and mezcal. But apparently, they make whiskey too. It seems anyone can make whiskey, as all that's needed is some grain. Then they can all discuss "terroir," "local water source," and single origin grain, or whatever else they talk about. And another surprise... green corn?! So, not only does Mexico produce whiskey, but they also have green corn?! I never knew that was a thing. I had a small taste of this, and it completely amazed me. Apparently, whiskey made from green corn is incredibly challenging to produce because the green corn is very difficult to work with as a grain. This whiskey is currently the only known green corn whiskey worldwide. Yes, the sole green corn whiskey globally; that's how exceptionally difficult and rare it is to make. And it's from a single cask, no less. Unfiltered, no added color, single cask, and only a few casks were produced. The nose presents jalapeño, green chile, and herbal notes. It's thick and viscous. The palate truly comes alive. It's a blend of bourbon, Springbank, and a hint of tequila, with a slice of green chile. Truly one-of-a-kind. At $155, it's expensive, but I understand why: limited casks, and a difficult grain to cultivate and process. I'm glad I had the chance to try a taste, and if you encounter this anywhere, get a pour – the uniqueness is well worth the cost.
