Penelope Rio, part of the brand's Cooper Series that explores various oak finishes, is a four-grain straight bourbon. Its mash bill consists of 74% corn, 14% wheat, 9% rye, and 3% malted barley. The bourbon is initially aged in new, charred American oak before being finished in American honey and Brazilian oak casks. Total maturation time ranges from 4 to 6 years. This expression is bottled non chill-filtered at 98 proof.

The nose has the most intense sweet aroma I've ever encountered in a bourbon. It smells like a cinnamon crunch bagel or a cinnamon roll. Big notes of honey, brown sugar, cinnamon, nutmeg, light coffee, and sweet baked goods. A tangy honey cream cheese scent follows, providing some balance. Tastes like toasted cinnamon toast crunch, but sweeter, with the complexity of honey and molasses. Honey cream cheese also comes through on the palate. The flavor exactly matches carrot cake with cream cheese frosting, minus the carrots. Finishes exceptionally smooth, with pleasant woody, baking spice notes. It's very dessert-like, with deep and complex sweet cinnamon oak, and bakery flavors. My favorite flavor profile ever.

It's like the perfect blend of a cinnamon roll and an oatmeal creampie. The aroma is cinnamon roll. The palate offers cinnamon roll and oatmeal creampie flavors. The finish is oatmeal creampie. You'll either love it or despise it. My initial pour was heavily cinnamon with little sweetness; I briefly thought I'd accidentally poured Fireball. After allowing it to breathe, I appreciate it, but the price prevents a repeat purchase. It's definitely fun to share with others.

AROMA - SWEET, abundant raisin and a very sticky and warm cinnamon roll, freshly baked. An addictive aroma. TASTE - Much of the aroma carries through. All cinnamon roll with some raisins; this is as true to its scent as possible without being artificially flavored or finished. Some cinnamon and vanilla are present. FINISH - Some cinnamon, vanilla, oak, and leather are present and all are soft. A very nice dessert bourbon.

Aroma: cinnamon and sugar, cream. Amazing Body: sweet cinnamon and sugar. flan. this is dessert. it has good cinnamon spice. Finish: it's literally dessert. nice spicy finish. I really like this. Possibly the coolest/most unique bourbon I've tried. The two finishes work exceptionally well together to create this incredible experience.

Nose: An amazing aroma with hints of cinnamon, honey, toasted oak, and caramel. It genuinely smells like a cinnamon bagel with honey cream cheese spread on it. Palate: Extremely dessert-like and smooth, with notes of cream cheese frosting, honey, cinnamon, baking spices, and salted caramel. A very long finish.

This is among the finest bourbons I've ever tasted, possibly the best. It delivers rich flavors of cinnamon, vanilla, and honey. Imagine a bourbon Cinnabon, but vastly superior. Truly amazing!
