A refined Kentucky Straight Bourbon Whiskey from IJW Whiskey in Kentucky, created with a mash bill high in wheat using an old wheat variety named Old Emmer. It was aged in new charred American white oak barrels for at least 2 years and finished with toasted oak staves before being bottled at 44% ABV. It starts with an aromatic profile of grains, fruit, wood, and spice; its rich body introduces notes of wheat, apple, caramel, and vanilla; culminating in a balanced, medium-length finish with hints of oak, butterscotch, coconut, and chocolate.
