An elegant Kentucky Straight Bourbon Whiskey from IJW Whiskey in Kentucky, made with a high-wheat mash bill using an ancient wheat variety called Old Emmer; aged in new charred American white oak barrels for at least 2 years & finished in Calvados casks, before being bottled at 52% ABV. It offers an aromatic introduction with notes of grain, fruit, wood & spice; a rich development adds notes of wheat, apple, pea, caramel & vanilla; leading to a balanced finish of medium length with notes of oak & butterscotch.
