About this bottle

Located in Tel Aviv, Israel, Milk & Honey Distillery presents its Whisky in Bloom Young Single Malt Double Cask. This expression underwent maturation in two distinct cask types: ex-bourbon and ex-red wine STR barrels. The STR casks are a creation of the late Dr. Jim Swan, who provided consultation to Milk & Honey. STR stands for the shaved, toasted, and re-charred process he devised. The whisky is presented without chill-filtration at 46% alcohol by volume. It became available in the United States in December of 2019 and holds Kosher certification.

M&H adheres to Scottish maturation standards, aging their spirit for three years before calling it whisky, despite the expedited aging possible in the Israeli climate. For the U.S. market, they collaborated with their importer to offer a less mature “young single malt” designated “Whisky in Bloom,” and we are fortunate for it. A buttered toast aroma precedes a delightful crisp malt with pleasing barrel spice on the finish. Superior to many more aged single malts.

Tasted with a friend on 8/8/2020 Israel Single Malt A touch of peat. Vanilla. Corn notes? I find the peat a peculiar choice. I wonder why the first single malt producer in Tel Aviv would aim for an Islay profile? It's a respectable whisky, though there wasn't much to remark upon. It's smooth, sweet, and tastes like a young spirit. I enjoy it. I'd be keen to sample their mature product.

Shows significant potential but isn't quite there yet. No discernible flaws in the distillate, but it requires more time for maturation to reach its peak. I'm eager to witness its evolution in the coming years. It's highly likely to become a remarkable spirit with a bit more aging.
