Pour: Burnt honey, glencairn glass Nose: Faint orange, cocoa, mild malt, numerous subtle notes, nothing dominates. A rather complex aroma. Taste: Starts with buttercream, a slight warmth that quickly softens. The oak and age are noticeable in the finish but dissipate rapidly. There's a peppery tingle on the back of the tongue, reminiscent of Sichuan peppercorns. Overall: An initial burst of flavors that require several sips to fully appreciate due to the quick finish. Despite a complex nose, the taste was less impactful than anticipated, though still a pleasant experience.

About this bottle
This marks the second bottling in the Castle Hill Series from Milam & Greene, featuring select straight bourbons that are combined and bottled at cask strength. For this second batch, Heather Greene, CEO & Master Blender of the Texas-based company, chose 26 barrels. The oldest bourbon in the selection had aged for 14 years, 2 months, and 13 days, while the youngest was aged 13 years, 10 months, and 17 days. The maturation occurred in rickhouses across four states, using various casks. Production was limited to 3000 bottles, with availability in CA, CT, DC, FL, GA, IL, KY, MD, NJ, NY, OK, TX, WA, WI, and Alberta, Canada, as of late May 2022.

Appearance is a clear, burnt orange hue. It presents a fragrance of sorghum syrup, brown sugar, subtle peaches, vanilla, rosin, oak, and a hint of cool spearmint. The taste is agreeably woody, with a definite warmth that transitions into spicy cinnamon red hots, concluding with notes of coconut and vanilla.
Aroma: Smoky tobacco, ripe cherry, and aged oak. Taste: Direct notes of cherry and oak. Hints of black and red raspberry. Aftertaste: Oak, cinnamon, dark cherry, and vibrant raspberry. A satisfyingly long finish, truly excellent.
Notes of chocolate, cherry, leather, and toffee. A medium finish. It is smooth, understated, and intricate.
Develops on the palate. Structured tannins, creamy texture
