About this bottle

This is the first bottling in the Castle Hill Series. It features vintage bourbon aged 13 years, handpicked and presented at barrel strength. Just twenty barrels were chosen for this blend, marking it as the company’s most exclusive boutique whiskey to date. It is offered at 108.5 proof and was released in May 2021.

Camryn Hicks 4.0

An intriguing bottle. It's surprisingly spicy for its age, but it is bottled at a high proof. It has a gorgeous deep color and coats the glass thickly, almost like oil, with legs that persist even after the spirit is gone. The aroma is ethanol and vanilla, unless you let it rest for a while. Then it opens up with some cherry and maple syrup and a touch of tobacco. The longer it sits, the more it smells like vanilla pipe tobacco. The texture is oily and thick (no surprise given the legs). The taste is a bit fruity without being sweet, with some cinnamon spice from the high proof. There are notes of peanut butter. The spice is softened with a couple of drops of water, but it becomes slightly bitter, almost like toasted walnuts with some cherry. The oak is noticeable after adding water. The finish is long and chocolaty (before water), and oaky and vanilla (after). This bourbon isn't very sweet, but it's complex, enjoyable, and interesting.

Millam & Greene The Castle Hill Series Batch 1. Wow!!!! Incredible sweetness that draws you in. The palate offers more sweetness, chocolate, and peanuts. The finish is flawless, long, and tasty... Dickel is recognizable. I have to rate this between 4.25 and 4.5/5. This is cask strength, a blend of 20 exceptionally well-selected and blended barrels.

Superb craft bourbon. Feels quite oily in the mouth and lingers a long time after drinking. First, I tasted orange and cherry, which matched the aroma, but as those faded, tobacco and perhaps vanilla emerged. I suspect this will be a rare bottle soon.
