About this bottle

The maturation process for this single pot still whiskey from Irish Distillers' Method and Madness line included a finishing period in Wild Cherry Wood. This is the first instance of an Irish whiskey being matured in wood from a cherry tree. Prior to this, the single pot still whiskey matured in ex-bourbon and ex-sherry casks for an unspecified duration. Limited market availability commenced in August 2019.

The cherry wood aging provides a unique whisky experience. Thankfully, Irish whisky maturation has fewer restrictions. The aroma is akin to someone painting a shed filled with green apples in a summer meadow. Cotton candy is present upon arrival, followed by a developing spicy wood sap. The finish is long and sweet. If you're seeking something different yet accessible, this is the whisky for you.

Exceptional pour! The aroma is fresh mown grass, apple, and a hint of cedar. The taste features apple and pear with vanilla and ginger, finishing with a robust woodiness. Evokes walking through an orchard on a fall day. Wonderful!
