Once this has had some time to breathe, it's remarkable. Nose: The primary aroma is stewed strawberry, with a subtle raspberry note and a pleasant deep molasses. This is followed by cinnamon sugar, toffee, and a charred pie crust, finishing with a gentle vanilla. Palate: The initial taste is very sweet and sugary. That toffee/caramel note is the first thing I detect, then a burst of strawberry jam and baking spice. The mid-palate features a lovely white chocolate raspberry sugar cookie flavor, followed by a robust barrel char that presents as that slightly burnt pie crust taste. Finish: The finish is long and persistent, consisting of charred oak, sweet caramel, and a delicate fruitiness that is very pleasing. This is a superb example of a well-aged bourbon. The oakiness and char are perfectly balanced with the fruity and sugary notes. A truly beautiful bourbon. Final Score: 9.4/10
