Rachael Herrick 3.3

Appearance: Green tea. Smell: Gentle and intense. Baked pastries with honey or light syrup. Treacle notes are also detected. A subtle spiciness, possibly a hint of juniper. Taste: A bit smoother and more vanillated than anticipated. You can discern the influence of the first-fill ex-bourbon barrel. Grainy, perhaps some sugared porridge. Caramel and butterscotch with a touch of soft banana upon closer inspection. The heat somewhat overpowered the flavors. Aftertaste: Resinous spice, tree resin, abundant oak barrel essence. Intense and peppery, it almost feels like a different spirit. With water added: Delicate fruit and floral notes reminiscent of rain on the nose. Increased banana sweetness. Spicier on the palate. More floral notes throughout. I detect some coconut as well, but overall it's a little watery.
