Leiper's Fork Bottled in Bond Bourbon is crafted from a mash bill of 70% locally sourced non-GMO corn grown on the distiller's farm, 15% wheat, and 15% toasted malted barley. Distilled to 137 proof using a copper pot still, it enters the barrel at 110 proof. It ages for at least five years in new, charred American oak barrels with a #4 char, in accordance with bottled-in-bond standards, and is bottled at 100 proof.

This particular batch (from early 2024) is considerably more spicy (and less sweet) compared to the sample I tried a few months ago. The aroma is mainly toffee and cinnamon, with a hint of leather. The palate shows more toffee, shifting to red hots and spice. The finish is medium-short, starting with leather, then swiftly moving to pepper and cinnamon on the tip of the tongue.
Nose: Crème brûlée, malted grain, vanilla, oak, butterscotch, cinnamon, cocoa, pear, and corn. Palate: Sweet and spicy, with malted grain, cinnamon, caramel apple, barrel spice, oak, and popcorn. Finish: Peppery. Some highly unusual characteristics for bourbon, as it's primarily defined by the taste and aroma of unfermented malted grain, akin to brewing beer.
A standard by which I measure other bourbons; tastes almost like brioche, rich and buttery in the best way. Not overly sweet, similar to french toast before the syrup.
The aroma is intensely sweet yet possesses a pleasing intensity. The palate is peppery and spicy, with a touch of smoky char and wood. The finish is satisfyingly long. Truly delightful.
Day 5 at Seelbachs: pleasant sweet brown sugar but not quite cinnamon spice, almost minty like a rye. Very enjoyable.
Purchased this sight unseen while vacationing in Tennessee. I'm impressed. It's rich and smooth with the perfect amount of oak and cherry notes.
