This is the third whiskey sampled during my visit to Delilah's. While the establishment offers numerous custom whiskeys, a Kilchoman bottling created for Delilah's and Jack Rose in DC, named the Kilchoman Delilah's and Jack Rose First Cask, particularly stood out. It is aged for five years in Sauternes Casks and bottled at 59.6% ABV. The nose presents smoke, salt, berries, and possibly a baked good aroma. The palate delivers a recognizable Kilchoman peat smoke with an ash-like character, more than subtle but less than overwhelming. Additional berry notes are present, perhaps a touch more tart than on the nose, along with hints of vanilla cream and oak. This might be my initial experience with a Sauternes cask finished whisky, and it harmonizes exceptionally well with the Kilchoman peat without overshadowing it, unlike some Kilchoman sherry cask finished bottlings such as the Sanaig and Machir Bay. It's less intense than the Loch Gorm and remarkably smooth for a spirit just under 60% ABV. Generally, I would not seek out a custom bottling, but given its uniqueness, distinctiveness from other Kilchomans I have encountered, and availability at two premier whiskey establishments in the US, it felt worth sharing. While it doesn't introduce new territory for Kilchoman, it's certainly worth tasting if you are a Kilchoman enthusiast and find yourself in Chicago or DC.

Excellent scotch! Aroma: floral, campfire Palate: mild and pleasant warmth, floral honey, Finish: medium length, a touch of bitterness Overall, it's reminiscent of Uigedail but slightly sweeter. A great pour.
