Review Ironroot Hubris Straight Corn 🌽 Whiskey Aged 29 months ABV% 58.9 Mash: 100% Corn Distillery Ironroot Republic (Deniston, Texas) This whiskey is making this distillery famous - a straightforward, complex 100% corn whiskey with abundant flavor. It has received awards for best corn whiskey and others, not the typical unaged or barely aged corn spirit called "corn whiskey" (there are no regulations regarding aging corn whiskey in the USA). Nose: Grape, bubblegum, spices, cinnamon, oak, fresh pizza dough, celery, and an oily richness. Front: Immediately, there are sweet, candy-like fruity notes (pear, candy grape) finishing with oak and porridge. Back/Finish: Balanced with the complex fruit character. It's a delicate equilibrium – the youthfulness is undetectable; the deep oak wonderfully showcases the interesting distillate. The finish has some heat and oak. The complexity blossoms with added water, but it is enjoyable, substantial, and rich at cask strength. Currently, this is the finest American corn whiskey I've ever encountered. Damn good! This king among corn spirits displays a darker orange-copper hue with thicker, semi-viscous legs clinging to the glass. The aroma is rich and deep, with notes of dusty hay, apple, brown sugar, vanilla, mixed berries, cotton candy, and oak. The palate is dry and full-bodied, featuring notes of pear, grape Jolly Rancher, cinnamon sugar, creamed corn, and baked sweet potato. The finish is spicy with a peach flavor and isn't very long-lasting. Wow, this corn whiskey completely amazed me! I didn't expect a whiskey in this category to have so much flavor and complexity! I enjoyed this. I had this at the distillery, and it was a refreshing change. This whiskey has a sweeter, corn-forward profile with a subtle vanilla note, but it possesses considerably more depth than, for instance, Mellow Corn. The use of different corn varieties in its creation imparts layers of spice on the palate, which I found very pleasing. Personally, I prefer to start with a dram of Mellow Corn as an initial tasting spirit and then follow it with a couple of ounces of Hubris. This approach enhances my appreciation for the subtle flavors present in this expression. It stands out as one of the finest corn whiskeys available.

Remarkable. As smooth as any corn whiskey, yet possesses flavor and character from barrel aging. Not hot. It does have a somewhat peculiar lingering taste, and the aroma doesn't quite match the flavor profile. Still, a worthwhile drink.
