About this bottle

Hillrock Estate was established by Jeffrey Baker, who collaborated with Master Distiller Dave Pickerell to create New York's first "farm to glass" distillery in the Hudson Valley. The whiskey is made from 100% organic barley grown on-site and malted over three days. Peat from Speyside, Scotland, is used in the kilns for 20 hours to dry the malt, a duration determined through experimentation by Pickerell. Following initial aging in American oak, the whiskey spends an additional two weeks in ex-Oloroso sherry casks.
