This is Batch #3, a wheated Kentucky Straight Bourbon produced entirely from grain to glass. Its mash bill consists of white corn, white winter wheat, and malted barley. It's aged for five years in American white oak barrels and bottled at 48% ABV. The aroma presents notes of grain, wood, fruits, flowers, nuts, herbs, and spices. The palate is rich and creamy, featuring vanilla bean, orange zest, hazelnut, and sweet corn. The finish is long and balanced, with hints of glazed doughnuts, oak, clove, nutmeg, spiced caramel latte, and cigar. March 2024. A tasting and discussion with Master Distiller Marianne Eaves.

The small-batch recipe utilizes white corn, white winter wheat, and malted barley, incorporating an unconventional low-temperature fermentation process. The bourbon was aged for five years and bottled at 95.2 proof, with initial availability beginning in May 2023 in Kentucky, Tennessee, Georgia, and South Carolina at a suggested retail price of $129.

I previously had an Eaves collaboration with St Augustine distillery and had higher expectations for this release. The flavor was intense for a 95 proof and required ice; after it mellowed, I detected a trace of the former Eaves flavor, but significantly less. The price was high for this release, and I was left unsatisfied.
An intriguing pour, for certain. Adding a little water significantly improves it. A gentle build of warmth that never becomes overwhelming, which smoothly tapers off, revealing some flavors along the way. A bottle to keep on hand and savor on those special occasions.
