This Blanco, made with twice distilled liquid cooked in a brick oven and slowly fermented for over 72 hours, is then rested for two months in stainless steel after distillation. This process adds a bit more crispness to the spirit. The aroma presents strong agave, pepper, and smoke with subtle tropical fruit notes. A somewhat potent alcohol vapor scent was present, leading to some astringency. The initial taste has a touch of alcohol, followed by a sweet vanilla coating on the palate. Subtle hints of agave and pepper appear, along with a trace of medicinal character. The finish is robust and astringent. As it airs, smoke notes become more noticeable on the palate.
