About this bottle

Following a change in ownership at Ballast Point Brewing & Spirits, the founder, master brewer, and other individuals departed to establish a new distillery named Cutwater. This bourbon is produced in small batches and undergoes at least four years of aging in new, heavily charred American oak barrels.

This Bourbon evokes smoky licorice. I am undecided if I fully enjoy it, but it seems rather mellow. Contrary to common opinion, I do not find this bourbon to be harsh or unpleasant at all. It appears to have a somewhat herbal finish. The difficulty lies with the cost... I am unsure if it is worth the expenditure, but it is difficult to find bourbons with a comparable taste. A very distinct flavor.

It's acceptable for a four-year-old bourbon, but certainly not justified by the price. It's surprising how the cost of this bottle has only risen over several years. Funds would be better allocated to spirits that offer superior value for half the cost. Opened 2/13 Finished 9/19

An inconsistent character, a bit fiery on the tongue, a rough finish. It is certainly too expensive. Especially when contrasted with its single malt counterpart, which was excellent, though not worth the $250 cost by any measure.

The bouquet is full of vanilla and cinnamon, tasting very much like a rye. The finish is medium with a slight warmth. Adding a little water revealed more vanilla.
