Dahlia Gibson 4.3

Crystal clear. Bold aromas of tomato leaf, tomato paste, bell pepper, poblano, celery, carrot, musk, cilantro, white pepper, cement, saline, cherry tomato, brine, green olive, yellow onions. Fills the room with the scent of vegetable soup or sauce, primarily tomato paste. On the palate, sweetness emerges with an abundance of sour cherry, strawberry, rhubarb, mustard, onion peel, and chocolate. The finish lingers in your mouth until you wash it away with something else. It doesn't fade on its own. It's beyond long, more like permanent. There's banana, grass, fresh sugarcane juice, chili-salted melon, and dragonfruit. This didn't really taste like a rum product until the very end. I can only imagine this being exciting for enthusiasts and adventurers. Fascinating for those seeking a transformative, terroir-driven spirit experience

It has a strong molasses aroma with some salty smoked meat. The scent is very strong and wafts across the table. It has a substantially oily palate. There's some bite from the alcohol. The palate has a brown sugar or molasses flavor mixed with a lot of garlic. It's also quite salty. It kind of tastes like barbeque sauce with some vegetables, so perhaps a vegetarian barbeque meal. It's interesting and complex and it avoids the usual problems, but the garlic flavor is just far too strong, even though it is enjoyably sauteed. I'm glad I tried this, but I would not want to drink it again. It eventually has a bit of that usual light rum squash flavor, but it has a strong garlic presence with some barbeque sauce.

Smells of tropical fruit, banana, and leaves. Tastes of banana peel, tomato, light molasses, damp leaves, and a long finish with pepper, garlic, a hint of soy sauce. Compared to the Sajous I just tried, it is a bit lighter, has less ethanol, and is more intriguing.
