Lacking spice, bright citrus, or saltiness, the flavors focus on red fruits, dark dried fruits, smoked meats, and savory-sweet sauces (a friend accurately noted "sweet condensed balsamic vinegar"). The mouthfeel is smooth and full. End: Moderate to long. Peat, earth, tobacco. This expression is somewhat atypical for a Caol Ila, at least from my experience, as I don't recall one possessing such a luxurious quality, even with a red-wine or PX sherry cask finish. While one could argue it's entirely out of balance from a technical standpoint, its imbalance is in an enjoyable manner. There are no negative aspects to the profile; it's simply heavily influenced by the cask, with the spirit providing only a foundation and no prominent top notes. I'm uncertain about the initial cask (likely a refill hogshead), but the final maturation was in damp ex-port octaves, imparting significant sweet fortified wine characteristics. (It seems many recent North Star bottlings feature a small-cask port or PX finish – a friend must have acquired a large quantity of ex-wine octaves about ten years ago!). I thoroughly enjoyed it, enough to purchase a bottle immediately, as I appreciate whisky that embraces a bit of wildness occasionally. If you prefer your Caol Ila more "natural," with straightforward bourbon maturation allowing the seaside essence to come through, you might dislike this. However, if you enjoy drams like Laphroaig PX Cask or Arran Port Cask finish, you might find this equally appealing, though it is sweeter than both.
