NOSE Vanilla, toffee, smoke, roasted fruit, sweet custard, a hint of salt, fresh muffins, and honey. This 2006 Signatory Caol Ila 12 Years has a powerful, full, and heavy aroma that is definitely my favorite aspect of this whisky. PALATE Everything from the aroma is present, with added notes of honey graham crackers, a touch of char, freshly cooked griddle cakes, and burnt cookies. A warm, oily, and delicious dram. Time has treated this one very well. FINISH Lingering smoke, malt, fruit, and pastries/griddle cakes fade out, providing a perfect conclusion to a good whisky.

Brilliant liquid. The expected peat hits first, followed by apple. Adding a tiny bit of water really lets the flavors expand.
Tastes like apple pie, brown sugar, and cinnamon. A small addition of water enhances it well.
